GREETINGS
We had lots of needed rain last night and I had dug a deep trench so no water in the barn.The sun is out now and some of the humidity has come back. Hoping that we get a little cooler weather.
HAZEL
Hazel is improving slowly,whatever happened didn’t affect his ability to crow. I am hoping his recovery continues.
FREEZING PEPPERS AND SQUASH
Today I froze scallions, peppers and a small squash. These will all go into soups and stews this coming winter.
I have string beans to pick and when the weather cools a bit I plan on picking all my beets and pickling them. They will taste so good this winter.. I have had wonderful luck with the beet crop which was planted late and was an afterthought. I never thinned them but they grew anyway. The cukes have started coming in and I hope to make some pickles. The Farm Stand called and said that the tomatoes were ready, I can’t take a box till next week..
MAKING PESTO
I have been using the same recipe for Pesto since the late 70’s. Its simple and quick and freezes well.
2 cups basil (thick stems removed )
1/3 cup pine nuts or walnuts (I do prefer pine nuts but they are very
expensive)
I give these two items 3 or 4 pulses in my food processor
Add 4 garlic cloves minced
Just a little less than 3/4 cup of grated Romano cheese
Pulse again a couple of times
1/2 cup of a good Olive Oil
Turning your processor on slowly add the olive oil
I like my pesto textured but if you like it more like sauce keep checking till it’s the right consistency.
It takes less than 10 minutes. I put it into Zip lock bags and flatten them out and put the in the freezer. That way I can take out the packet and use just what I need.
THE CAT SELDOM SEEN
9 years ago I got a frantic call from another cat lover. Please take this kitten she needs a home. I tried to explain that I had over 10 cats at that time, which was already a lot. Then she told me the story of this little mite. Mother and siblings eaten by something she was found hiding and terrified. Thrown in a cage and was brought to the vet where she got some shots and a clean bill of health. Then in another cage. I agreed to give this little one a home. Somehow in my wildest thoughts I thought that she would just adjust. She promptly found all the hiding places in my bedroom and I didn’t see her for a month then only her tail. So for the past 9 years I have only touched her maybe 10 times. I have tried to get her to the vets with pills in her food but it never happened. She made friends with the other cats and lost them along the way. Yesterday she was sleeping in the hut and I was able to take a picture of her for the first time. Last month I saw her upstairs for the first time. She has had to make changes as the cat population here has dwindled. There is still hope for catching her and getting her to the vets for a check up and shots. Meanwhile she is safe and warm here. Little Marion also know as Baby.
